A Refreshing Do-Ahead Soup to Serve at your next Dinner Party!

Avocados are an amazing fruit, known as a superfood in the nutrition world, and they are extremely versatile. They play the starring role in guacamole and are a wonderful addition to an infinite number of salad recipes. They are so healthy that many diet conscious individuals are opting to use mashed avocado in place of mayonnaise in tuna and egg salads.

If you’re looking for something new and refreshing to do with your avocados, then this recipe is perfect for you! It is a Chilled Cucumber Avocado Soup. The soup is an exquisite vibrant green with a smooth, creamy texture. Topped with bright red chopped tomatoes and feta cheese, it displays as a work of art.

It is the perfect starter for a dinner party because it is ridiculously easy to prepare and is made ahead of time so that it can chill before serving. You basically prep a few ingredients and then blend it all together to chill. Served with a little Prosecco as a starter, your guests are sure to be impressed!

Chilled Cucumber Avocado Soup

Serves 6

Ingredients
  • 1 lb. organic Persian cucumbers, roughly chopped
  • 2 small avocados, cut into small pieces
  • 1/3 cup fresh lime juice (about 2 limes)
  • 3/4 cup water
  • 1/4 cup chopped cilantro
  • 1 1/2 teaspoon Kosher salt
  • 1/2 teaspoon freshly ground pepper
  • 1/4 cup crumbled feta cheese and chopped tomato for garnish
Instructions
  1. Place the cucumbers, avocados, lime juice, water, cilantro, salt, and pepper into a blender.
  2. Process ingredients until smooth.
  3. Taste and add more salt/pepper if you like.
  4. Transfer the soup to a bowl and chill in the fridge for at least an hour before serving.
  5. Garnish with fresh, chopped tomato and feta cheese.
Notes
  • If you don’t use organic cucumbers, peel the skin before chopping.
