Ingredients
  1. 2 lbs brussels sprouts
  2. 1 1/2 Tbsp extra virgin olive oil
  3. 1/2 tsp curry powder
  4. 1 tsp lemon zest
  5. 1 tsp high quality olive oil for drizzle
  6. 1 tsp Balsamic glaze
  7. salt
Instructions
  1. Preheat the oven to 350°.
  2. Clean and remove any outer damaged leaves from brussels sprouts. Remove the rest of the leaves by cutting the stem end repeatedly until all of the leaves can be easily removed. Throw away the small inner core.
  3. Toss the leaves with 1 1/2 Tbsp olive oil, curry powder and 1 tsp salt. (sea salt, kosher salt or flake salt) Spread out on a baking sheet in a single layer and bake for approximately 8-10 minutes or until most edges are browned and crisp.
  4. Pile on a plate in a pyramid and sprinkle with lemon zest, a drizzle of olive oil and balsamic glaze. Salt to taste and serve immediately.
Notes
  1. Balsamic glaze can be found at most grocery and specialty food stores and comes in a plastic squeeze bottle. Roland is a common brand that you can find it in.

  1. Don’t know a good quality olive oil brand – would love you to share and don’t know about Balsamic glaze. Would appreciated any leads.

    1. Hi Patti, Trader Joe’s has some pretty good olive oils and for local brands, I like Kiler Ridge and Pasolivo. If you have a “We olive” in your area, you should go in and do a tasting. It’s a lot of fun and you can get some great choices that way. Olive oil is a bit like wine in that it can be personal preference regarding taste. The Balsamic Glaze I use is “Roland” and you can find it at Von’s and other grocers. You can also make it yourself just by slow simmering balsamic vinegar on the stove until it thickens. My favorite Balsamic Vinegar is “We olive’s” traditional aged balsamic. It’s fantastic!
