Fearful of Making Bread? Wait till you See This!

It’s 2017. I’m committed to creating a healthier me. If you want to jump on the bandwagon with me, you won’t be disappointed and I’m happy to bring you along on the journey. For the month of January, my plan is to cut out sugar, alcohol and yeast. You don’t have to follow the same strategy, but in any case, you will be receiving some of the most amazing ideas for healthy eating that you can incorporate into your own daily routines. I’m already blown away by some of the things I’ve been making and I can’t wait to share them all with you!

First of all, let me tell you that I have so much energy that I want to bottle it up! After finishing my 5 day Isagenix Nutritional Cleanse and beginning a week’s worth of my new eating regimen, I feel great! I’ve lost that holiday bloated feeling and I can taste the nuances and intricacies of food like never before. It’s pretty amazing.

So, what am I writing about today? I came across the most outlandish bread recipe I have ever seen. It really has to be baked in your own kitchen to believe that it works. The recipe has FOUR ingredients. And none of them are flour! I didn’t believe it was possible until I saw it with my own eyes. It has no sugar other than the 1g per serving in the almond butter. The ingredients for the one I used has raw almonds. That’s it! It is a great bread to eat alone or with your coffee or tea. I just purchased some Chickory coffee from New Orleans online and it goes magnificently with it, but I digress… You can make french toast out of it or use it for a sandwich, or simply eat it toasted with butter (add a drizzle of honey if you aren’t following a strict no-sugar regimen.) 

Super Simple Almond Butter Bread

Yield:  1 loaf

Ingredients
  • 1 cup natural almond butter with no additives (Trader Joe’s Raw Almond Butter)
  • 4 eggs
  • 1 tsp baking soda
  • pinch salt
Instructions
  1. Preheat the oven to 325ºF.
  2. Line an 8- x 4-inch loaf pan with parchment paper. Lightly oil the pan so that the parchment will stick to it, which makes it much easier to handle.
  3. Whisk the almond butter and eggs together until blended smoothly. Whisk in the salt and baking soda. Pour the batter into the prepared loaf pan and bake for 30 minutes.
  4. The bread is done when you insert a toothpick or fork and it comes out clean. Remove from the oven and cool. Cut into slices and freeze portions for future use or store in the refrigerator.
Notes
  • Oil separation often occurs with natural nut butters, so either store the jar upside down or give it a good stir to re-incorporate the oil.

  1. WOW! What a surprise recipe! Just made this bread and it turned out great! You would swear it was made with flour, not almond butter. My husband says he needs sweet with it, honey is a great idea.

      1. I added Trader Joe’s Super Seed & Ancient Grain Blend on top before baking. Gave it a nice crunch.
