Fish Gaucho, a new restaurant brought to Paso from the the successful Pappy McGregor’s Pub & Grill folks, is a winner! Finally, we have a great Mexican restaurant in Paso. Fish Gaucho serves California Mexican fare as well as housing a superb selection of tequilas and quality mixed drinks. We have had numerous Mexican restaurants in Paso come and go and none of them seemed to understand the recipe for success that this restaurant does. They have been busy from the day they opened and will continue to be, as long they deliver the quality products they currently have.
Their decor is well thought out and extremely fun. It really sets the stage for a wonderful Mexican experience.
Their tequila list and flights along with their custom mixed drinks is extensive. The two margaritas we tried were delicious and thoughtfully made with half a rim of salt to satisfy both the salt lovers and others.
Food is certainly an important component of their success, and the food there is outstanding. However remarkably, their service exceeds the excellent food. From the management to host staff to wait staff, the service is the best I have received at any restaurant in Paso or surrounding areas. They are interested in accommodating their guests to the best of their ability and it shows! I have been there twice so far, and both times the knowledge of the wait staff and their attention to detail has been top notch. I’m definitely not the easiest critic and they certainly have impressed me!
Their menu is crazy good and their portions are quite generous at a great value. You won’t leave here hungry – that’s for sure. Their attention to detail on the food is as good as the service. They marry wonderful and unique flavors together to complete a menu that has a nice variety at a gourmet level of Mexican fare. However, if you are interested in street style tacos or burritos, they offer them also. It’s just that each of their fillings or toppings which are made with the utmost quality and care, will amaze you with their flavor!

Everything was wonderful. We felt there were a few minor misses such as needing to serve a few chips with the ceviche, bringing out the flavor of the chorizo more in the brussel sprouts and cutting the Ahi pieces smaller, but these were quite minor in the overall enjoyment of two fantastic meals. The most surprisingly exceptional dish was their Pork Pozole as it was done better than I have had anywhere else with the perfect distribution of meat, vegetables and hominy. The broth was rich and deep in flavor. It is definitely something I plan to return for soon, even though I would like to adventure further on their menu. They offer it in a cup or a bowl so I suggest you try some at least as a starter for your meal. You will be utterly impressed!

Oh I agree on this place! Awesome food and very effecient staff! I had to have the lobster enchiladas and they were the ultimate and they did not short on the hunks of lobster in there…it was all soooo good. My hubby had the short rib taco trio and the meat was right off the bone of the rib, glazed with the juices and so perfect!!
