I received the most amazing Green and Gold Kiwi in my Talley Farms CSA box! They were already ripened and ready to eat. The fruit is not only exquisite, but absolutely delish! They also contain numerous phytonutrients as well as well known vitamins and minerals that promote your health. They are an excellent source of Vitamin C and dietary fiber.
I thought the Kiwi would pair nicely with my Talley Apples so I decided to make a salad. Most of the ingredients for this salad were from my box, including the beautiful butter lettuce and juice used in the dressing made from their fresh oranges. A simple mixture of ingredients, yielding a mouthwatering taste in each bite!
To show off the beauty of the kiwi’s, I peeled them with a sharp knife and sliced them thinly. I do this the same way I peel any citrus by cutting off both ends and then standing the fruit on end, I use my knife to make cuts from top to bottom around the kiwi until it is completely peeled. You can also eat kiwi with the peel and you can even scoop it out of the skin with a spoon! This is especially easy when they are nice and ripe like these are.
I didn’t feel the need to peel the apples as their light skin makes a nice presentation. Along with that was some toasted raw walnuts and fresh butter lettuce. You can add other ingredients, but I enjoyed the simplicity of this salad and it’s fresh taste. The orange poppy seed dressing was just the right enhancement to tie it all together.
Kiwi and Apple Salad with Orange Poppy Seed Dressing
Serves 2
Ingredients
- · 4 cups butter lettuce, torn into bite size pieces
- · 1 medium apple, chopped
- · 2 kiwi, peeled and sliced thinly (I used one green & one gold)
- · 2 tablespoons chopped walnuts, toasted
- · 2 tablespoons fresh orange juice
- · ½ teaspoon honey
- · 1 ½ teaspoons apple cider vinegar
- · 3 tablespoons plain low fat Greek yogurt
- · 1 tablespoon olive oil
- · pinch of Kosher salt
- · pepper to taste
- · ½ teaspoon poppy seeds
- Place the butter lettuce on two plates. Top with the apple, slices of kiwi and chopped walnuts.
- Combine all ingredients except poppy seeds into blender. Blend for about 10 seconds or until everything is combined well. Add the poppy seeds and stir gently to combine.
- Drizzle 1-2 tablespoons dressing over each salad plate and enjoy!
