Happy New Year from Delish-Dish!

Welcome to 2017!

I’m looking forward to a healthy and adventurous year. Wow, it was a busy holiday season around here. Barely a day free on my calendar most of the month of December – and it shows in my lack of posting on my blog. I apologize for life taking me away from you. However, it sure didn’t take me out of the kitchen! I still cooked up a storm – just too busy to do any photo shoots or posts. I used many tried and true recipes I have posted and discovered some new recipes on the internet. I thought it might be fun to share a few of my holiday menus with you including links to their recipes in case you want to try some of them out yourselves!

Pan-Roasted Chicken with Tangerine-Brandy Sauce – http://www.delish-dish.com/pan-roasted-chicken-with-tangerine-brandy-sauce/ (One of my favorite chicken recipes! The chicken turns out moist and tender and the sauce is magnificent)

Sweet Potato Latkes – http://www.delish-dish.com/sweet-potato-latkes/ (A family favorite. Used leftovers to make Sunday breakfast topped with leftover cedar planked Salmon and poached eggs and used tangerine juice for Mimosa’s!)

Maple & Tangerine Glazed CarrotsI roasted whole baby carrots with olive oil, salt and pepper. When almost done, I drizzled some maple syrup, a light sprinkle of brown sugar and some tangerine juice and cooked them for another 10 minutes. My son said they were the best carrots he ever had!

Christmas Dinner:

Spice Rubbed Roast Beef Tenderloin – http://www.epicurious.com/recipes/member/views/spice-rubbed-roast-beef-tenderloin-with-red-wine-sauce-fine-cooking-50164083  (I used the Rubbed Roast Beef recipe from Epicurious and made a different sauce to go with it. I cooked it rare and let it rest. It turned out perfect!)

Creamy Morel Mushroom Sauce – http://www.food.com/recipe/creamy-morel-mushroom-sauce-326496 (I added extra wine and some chicken broth to thin it a bit. My husband, who never over-indulges, was caught eating this sauce by the spoonful!!)

Yorkshire Pudding – http://www.epicurious.com/recipes/food/views/yorkshire-pudding (So easy to do in this one pan version! Would have been even better with more pan drippings, but my meat was so lean, there wasn’t much. A great recipe to partner with prime rib.)

Yukon Potato Stacks – http://www.delish-dish.com/easy-amazing-sweet-potato-stacks/ (I converted my Sweet Potato Stacks recipe into Yukon Stacks and subbed thyme for the rosemary. Used butter without coconut oil and added some shredded aged white cheddar and parmesan in with the stacks. Amazing!)

Roasted Brussel Sprouts and Fennel

Classic Rice Pudding – http://www.finecooking.com/recipes/classic-rice-pudding.aspx (Creamy and delicious – even won over the naysayers)

Eggnog Snickerdoodles – http://amyshealthybaking.com/blog/2014/12/08/eggnog-snickerdoodles/ (A healthier version to offset the richness of the pudding. A perfect combination)

Seafood Chowder – http://www.foodnetwork.com/recipes/ina-garten/seafood-chowder-recipe.html (I made this recipe as written except for subbing halibut for the monkfish and used leeks instead of onion. I made Ina’s homemade stock which is a definite MUST for this recipe. It was fantastic!  Our guests brought along a salad and fresh bread for dipping. We then moved on to another party for dessert!)
