If you liked Tater Tots, you will Really Love Zucchini Tots!

It is so much fun to find new ways to add more vegetables to your diet. The American Heart Association states that for a 2,000 calorie diet, you should be eating 4-5 servings of vegetables per day. That may seem like a lot, but it’s really easy to incorporate more vegetables into your menu by adjusting ingredients just a bit. One fun way is to eat more side dishes or snacks that are made with vegetables. These Baked Zucchini Tots are a great example!

We all have some old time fav’s that we just don’t eat any more. Why consume empty calories when you can fulfill your hunger with something healthier. But life should be a balance so converting some of those old fav’s into something satisfying and better for you, is a great idea! I make my Baked Zucchini Tots with a bit of panko and sharp cheddar cheese. They are great as an appetizer, snack or side to a sandwich. I serve them with gourmet ketchup to add a little extra zing to the dish. They take me back to memories of times gone past but I am much happier now, enjoying this more nutritious version.

Baked Zucchini Tots

Serves 4

Ingredients
  •  2 medium zucchini
  •  2 teaspoons Kosher salt
  •  1 green onion chopped
  •  1/3 cup panko
  •  1/3 cup shredded sharp cheddar cheese
  •  1 egg, lightly beaten
  •  1/2 teaspoon Italian seasoning
  •  2 teaspoons garlic powder
  •  1 teaspoon freshly ground pepper
Instructions
  1. 1. Preheat oven to 400°.
  2. 2. Grate the zucchini into a medium bowl. Add salt and toss to coat. Let sit for 15 minutes to draw out the moisture. Put the zucchini in a clean dishtowel and wring it out over the sink until all of the liquid is drained.
  3. 3. Put the zucchini back in the bowl and add the green onion, panko, cheese, egg, Italian seasoning, garlic powder and pepper. Mix together until well blended.
  4. 4. Cover a baking sheet with parchment. Roll the mixture into tablespoon sized tots and place on baking sheet.
  5. 5. Bake for 20-25 minutes or until nicely toasted on the outside.
  6. 6. Serve warm with ketchup.
Notes
  • Look for a gourmet ketchup to serve with your tots or make your own!
