Impress Guests at Your Next Dinner Party with this Sumptuous Meal!

I’ve been working my way through the recipes in The San Luis Obispo Farmers’ Market Cookbook and I’m really enjoying it! There are some very talented chefs on the Central Coast of California and it is illustrated in the recipes they have contributed in this beautiful cookbook. I am also loving reading the short stories that showcase the chefs and local businesses who are featured in the book.

The meal I am posting about today includes a recipe from Chef Nicola Allegretta of Mama’s Meatball for Pollo Saltimbocca. He is also the owner/chef of a restaurant that showcases Peruvian cuisine called Mistura. I have dined at both of his restaurants and thoroughly enjoyed my meals and the warm reception from Nicola and his staff. I was excited to try one of his recipes and was thrilled to discover that it was easy to follow and turned out perfectly!

There are several steps in creating this dish, however, none of them are daunting. It is a simple, yet elegant dish that is a perfect selection for a dinner party. I was able to prepare the chicken ahead leaving the last step of finishing the dish taking only a few minutes. I love serving meals that allow me to entertain my guests without spending too much time with last minute preparations.

I wanted to make a side dish that would compliment the Chicken Saltimbocca so I made some Broccoli Pesto served with Brown Rice Pasta. It made an excellent base for the dish with the chicken and sauce served on top surrounded by a sprinkling of fresh grated Parmesan cheese. A little side salad with a Caesar Dressing that I found in the cookbook contributed by Chris Kobayashi of Artisan was the ideal component to round out the meal. Chris is another very talented chef on the Central Coast, owner of two restaurants – the other being, Kitchenette.
