Sauteed Brussels Sprouts and Apples

The sweet tartness of apples pairs wonderfully with brussels sprouts in this great side dish!
Ingredients
- 1/2 lb. brussels sprouts, cleaned and halved
- 1-2 gala apples unpeeled, cut into chunks of similar size to sprouts
- 1 shallot, chopped fine
- 2 tablespoons extra virgin olive oil
- 1/4 cup chicken broth
- 1 tablespoon peach balsamic vinegar (regular or other flavor can be used)
- kosher salt and freshly ground pepper
Instructions
- Heat a medium size skillet over medium-high heat and add olive oil. Add shallots and sauté for 1-2 minutes, being careful not to burn. Add brussels sprouts and fry until they are browned on all sides, about 5 minutes. Lower heat and add chicken broth. Cover the pan and simmer for 5 minutes until brussels sprouts are almost tender. Remove cover, turn heat back up to medium-high and add apples, sautéing for 3-5 minutes until tender crisp and caramelized. Add vinegar and continue to cook stirring occasional for another 2 minutes. Season to taste with salt and pepper.
Notes
- I find it is easier to get a nice brown color on brussels sprouts if you sauté them first and then add a little liquid, cover and steam until they achieve the correct tenderness. If you steam them first, you may end up overcooking them while trying to brown afterward.
