Two Great Meals to make with your Leftover Pork Tenderloin

There’s usually only two of us in the house at dinner, unless I have invited guests to join. That makes it a bit difficult for some of the recipes I make. Especially when cooking a pork tenderloin that comes two to a pack. In an effort not to waste anything and making the rest of my weeks’ meals quite simple, I re-invented my leftover pork into two other wonderful dishes! I mean, wouldn’t it be a disgrace to let any of that tender, juicy, cooked perfectly – meat go to waste?

My first re-invention was Pork Fried Rice. Such a simple idea and great for using up any vegetables you have around. This time, I combined onion & garlic, orange sweet pepper, bok choy, frozen peas, egg and of course – pork. I had a nice amount of sauce left from the Sesame Crusted Pork Tenderloin that I made earlier that week, which made a perfect sauce for my fried rice. Not to worry though, if you are starting from a different recipe, you can easily create a new sauce with a little soy and sesame oil.

My second re-invention was Pork Banh Mi. I used a French baguette as the base for the sandwich as I don’t like the bread to overwhelm the rest of the ingredients. It also toasts up quite nicely in the oven! For fillings, I used pickled carrots and radishes, a slice of cucumber, a handful of cilantro and thinly sliced pork tenderloin. This was sandwiched on a nicely toasted baguette coated with a mixture of mayo, Sriracha and hoisin sauce.  A great fusion of tastes and textures in each bite. Yum!

I even used some of the extra plain rice (I made too much) and some leftover coconut milk to make a quick Rice Pudding for dessert. So if you’re like me and can’t fathom eating the same meal for days, just get creative and reinvent your leftovers into other new and exciting dishes!

  1. LOVED these ideas for leftovers!!! Thank you! We almost always have a few leftovers. It is tough to re-invent the leftovers into a great meal, but these do that!

    1. Thanks Linda. I know that when cooking for two, leftovers are almost always a certainty. I’ll keep thinking of ideas to post for them.
