Are you getting tired of making guacamole? I love, love, love avocados. Honestly, I can eat them like an apple, just peel and slice. I put them in salads, and on toast and have certainly made my share of guacamole recipes. However today I wanted to find something else to do with a ripe avocado and I saw a cool idea in my February Food and Wine magazine. Avocado Hollandaise!
Simple to make with only 3 ingredients plus some hot water and seasoning. Just add 1/2 chopped ripe avocado to your blender with 2 teaspoons fresh squeezed lemon juice and 1/3 cup hot water. Blend until pureed, about 2 minutes. With the machine on, drizzle in 2 tablespoons olive oil until combined. Season with salt and pepper and serve!
Then enjoy it on anything you would put regular hollandaise sauce on. I tried it on Eggs Benedict and it was yummy! You could also serve it over asparagus, broccoli, fish, … the list in endless! Let me know what ideas you have for using this delicious, creamy sauce.
