Quick and Easy – Oven Baked Sweet Potato Fries

Have you seen some of those fun videos that come over Facebook lately?
They make the process look so simple and the food looks yummy! Most of the ones I’ve seen are not something I would generally make because they are laden with rich, fattening ingredients. However, the other day I saw one from Tastemade for Garlic and Herb Sweet Potato Fries that you bake in the oven and I thought I would give it a try!

The process was simple and they were a perfect side dish to go with my Salmon con Salsa de Mandarina (Salmon with Tangerine Sauce). I had a nice large sweet potato from my Talley Farms CSA box that was perfect for slicing into thin sticks and the best part was, I didn’t even have to peel them!

After baking them until tender and browned in spots, you just toss them with a mixture of fresh chopped parsley, garlic and Parmesan cheese. I only used one large potato and it made more than enough for two servings. If you’re like me…you can’t stop eating them! You can even change up the garnish and use cilantro and Cotija or Feta cheese instead of parsley and Parmesan. Let me know if you come up with your own mixture!

Garlic And Herb Sweet Potato Fries

Serves 2

Ingredients

  • 1-2 large sweet potatoes
  • 2 tbsp. olive oil
  • 1/2 tsp. kosher salt
  • 1/4 tsp. pepper
  • 3 tbsp. grated parmesan
  • 2 tbsp. fresh Italian parsley, chopped
  • 1 garlic clove, minced

Directions

  1. Preheat oven to 450 degrees.
  2. Line a baking tray with parchment paper and set aside.
  3. Slice the sweet potatoes, with skin on, into 1/2 inch x 4 inch sticks (fries).
  4. Place the sweet potatoes on the baking sheet and toss with olive oil, salt, and pepper until evenly coated.
  5. Place in the oven for 20-25 minutes or until golden brown and starting to burn on the edges. Toss the fries once after 15 minutes.
  6. Remove the fries from the oven and top with cheese/garlic/parsley mixture.
