The Wonder of Golden Beets!

Beets have been known to lower your blood pressure, boost your stamina and fight inflammation. They are rich in valuable nutrients & fiber and support detoxification. All this and they taste really good too! They make a delicious addition to salads and entrees and can be eaten without much fuss at all. This recipe shows them coated with a sweetened orange glaze that makes them absolutely irresistible!

When preparing beets, I find that it is much easier to leave the skins on because after you cook them, they will easily slide off.  (That way you aren’t peeling a lot of the vegetable away that you could be eating) You can do this with your hands or a towel. In this case, they were still quite warm so I used a small spoon to scrape the skins off. It was super easy to do!

You can prepare your beets ahead and refrigerate them for up to a week. Then just slice off or use however much you need for your recipe. That way you have them ready to use at a moments notice. I prepared them using a Glazed Golden Beet recipe and then added them to a salad made with avocado, strawberries, goat cheese and walnuts. The next day I served them as a starter topped with goat cheese, toasted pistachios and balsamic glaze. Yum! Both variations were amazing.

Glazed Golden Beets

Serves 4
 
Ingredients
  • 3 large golden beets
  • 2 tablespoons brown sugar, packed
  • 2 tablespoons fresh squeezed orange juice
  • 1/2 tablespoon butter
  • 1/8 teaspoon salt
  • dash freshly ground black pepper
Instructions
  1. Cut leaves and stems from the beets and scrub; put the whole, unpeeled beets in a large saucepan and cover with water. Bring to a boil; cover and simmer over medium heat for 20 to 30 minutes, until tender.
  2. Slip skins from beets and cut into 1/4 inch slices. I use a small spoon to scrape the skins off.
  3. In a large skillet or saute pan, combine the brown sugar, orange juice and butter. Bring to a simmer over medium heat. Add the beets and cook, uncovered, stirring frequently, until the liquid has evaporated and beets are glazed, about 5 to 7 minutes. Season with salt and pepper.
