A new String Bean recipe that you’ll want to Gobble Up!

As a kid, one of the only vegetables I liked was string beans. We ate wax beans (the yellow ones) and green beans out of a can. Yuck! I can’t even imagine doing that any more, however I still love string beans. Just as long as they are the fresh variety. Well fresh is what they are when you get them from Talley Farms CSA!

Of course everyone loves the infamous Green Bean Casserole. I have my own version called Oven Baked Haricots Verts with Cream of Mushrooms and Crispy Shallots posted under Side Dishes in my recipe index. But when you want to do something simple, yet delicious, this is a recipe you can do in 20 minutes from start to finish. And it’s the kind of thing you can’t help nibbling till it’s all gone! But don’t worry because it is healthy and low cal, so it’s ok.

This recipe is a mix of garlic and parmesan cheese coated on the beans with a little olive oil and egg. You roast them in the oven and voila, you have wonderful garlicky flavored, oven fried cheesy green beans. Be sure to cook them directly on your baking sheet so you can scrape up all of the little crunchy pieces as that is the best part to nibble on! Yum, my mouth is watering just thinking about it.

Garlic Parmesan String Beans

Serves 4

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons minced garlic
  • 1 egg, beaten
  • 1/2 teaspoon garlic salt
  • 12 ounces fresh string beans, variety of wax and green if available
  • 1/3 cup freshly grated Parmesan cheese

Directions

  1. Preheat oven to 425 degrees.
  2. In a large bowl whisk the oil, garlic, egg and salt together.
  3. Toss in the string beans and coat well.
  4. Sprinkle in Parmesan on the string beans and toss gently.
  5. Place evenly on a greased baking sheet.
  6. Bake for 12-15 minutes or until golden.
  7. To crisp, heat for a minute or two under broiler.
