Ingredients
  1. • 2 medium zucchini
  2. • 2 teaspoons Kosher salt
  3. • 1 green onion chopped
  4. • 1/3 cup panko
  5. • 1/3 cup shredded sharp cheddar cheese
  6. • 1 egg, lightly beaten
  7. • 1/2 teaspoon Italian seasoning
  8. • 2 teaspoons garlic powder
  9. • 1 teaspoon freshly ground pepper
Instructions
  1. 1. Preheat oven to 400°.
  2. 2. Grate the zucchini into a medium bowl. Add salt and toss to coat. Let sit for 15 minutes to draw out the moisture. Put the zucchini in a clean dishtowel and wring it out over the sink until all of the liquid is drained.
  3. 3. Put the zucchini back in the bowl and add the green onion, panko, cheese, egg, Italian seasoning, garlic powder and pepper. Mix together until well blended.
  4. 4. Cover a baking sheet with parchment. Roll the mixture into tablespoon sized tots and place on baking sheet.
  5. 5. Bake for 20-25 minutes or until nicely toasted on the outside.
  6. 6. Serve warm with ketchup.
Notes
  1. Look for a gourmet ketchup to serve with your tots or make your own!
