Baked Zucchini Tots

Serves 4
Ingredients
- • 2 medium zucchini
- • 2 teaspoons Kosher salt
- • 1 green onion chopped
- • 1/3 cup panko
- • 1/3 cup shredded sharp cheddar cheese
- • 1 egg, lightly beaten
- • 1/2 teaspoon Italian seasoning
- • 2 teaspoons garlic powder
- • 1 teaspoon freshly ground pepper
Instructions
- 1. Preheat oven to 400°.
- 2. Grate the zucchini into a medium bowl. Add salt and toss to coat. Let sit for 15 minutes to draw out the moisture. Put the zucchini in a clean dishtowel and wring it out over the sink until all of the liquid is drained.
- 3. Put the zucchini back in the bowl and add the green onion, panko, cheese, egg, Italian seasoning, garlic powder and pepper. Mix together until well blended.
- 4. Cover a baking sheet with parchment. Roll the mixture into tablespoon sized tots and place on baking sheet.
- 5. Bake for 20-25 minutes or until nicely toasted on the outside.
- 6. Serve warm with ketchup.
Notes
- Look for a gourmet ketchup to serve with your tots or make your own!
