Ingredients
  1. 1 lb. organic Persian cucumbers, roughly chopped
  2. 2 small avocados, cut into small pieces
  3. 1/3 cup fresh lime juice (about 2 limes)
  4. 3/4 cup water
  5. 1/4 cup chopped cilantro
  6. 1 1/2 teaspoon Kosher salt
  7. 1/2 teaspoon freshly ground pepper
  8. 1/4 cup crumbled feta cheese and chopped tomato for garnish
Instructions
  1. Place the cucumbers, avocados, lime juice, water, cilantro, salt, and pepper into a blender.
  2. Process ingredients until smooth.
  3. Taste and add more salt/pepper if you like.
  4. Transfer the soup to a bowl and chill in the fridge for at least an hour before serving.
  5. Garnish with fresh, chopped tomato and feta cheese.
Notes
  1. If you don't use organic cucumbers, peel the skin before chopping.
