Chilled Cucumber Avocado Soup

Serves 6
A beautiful starter made in just a few minutes that you can do ahead.
Ingredients
- 1 lb. organic Persian cucumbers, roughly chopped
- 2 small avocados, cut into small pieces
- 1/3 cup fresh lime juice (about 2 limes)
- 3/4 cup water
- 1/4 cup chopped cilantro
- 1 1/2 teaspoon Kosher salt
- 1/2 teaspoon freshly ground pepper
- 1/4 cup crumbled feta cheese and chopped tomato for garnish
Instructions
- Place the cucumbers, avocados, lime juice, water, cilantro, salt, and pepper into a blender.
- Process ingredients until smooth.
- Taste and add more salt/pepper if you like.
- Transfer the soup to a bowl and chill in the fridge for at least an hour before serving.
- Garnish with fresh, chopped tomato and feta cheese.
Notes
- If you don't use organic cucumbers, peel the skin before chopping.
