One of my favorite fish dishes to serve is Miso Glazed Cod. It is super simple with an easy marinade and takes about 6 minutes under the broiler and you’re done! No turning required, so you don’t even have to have to worry about the fish falling apart. This preparation creates a nice golden glaze on the outside of the fish while leaving the inside silky, moist and delectable! I use this method with any type of dense white fish such as black cod, halibut or sea bass.
I thought it would pair nicely with a similarly seasoned vegetable so I created a Miso Creamed Kale side dish sautéed with shallots and garlic. Just a touch of cream and a bit of the sake I used in the fish marinade, resulted in a perfect base for my fish.
I had recently been to The Ferry Building in San Francisco where I purchased some incredible Maitake mushrooms from my favorite mushroom purveyor. What a superb garnish to complete my entree! I fried the mushrooms to a delicate golden brown in olive oil and added a bit of olive oil/garlic mixture at the end. Each item took only minutes to prepare and together presented a simple, yet elegant meal. Not wasting a thing, I served the rest of the sake with dinner which made for a perfect pairing!
