Ingredients
  1. 2 large broccoli crowns
  2. 2 garlic cloves, minced
  3. 4 tablespoons olive oil
  4. 1/2 teaspoon sugar
  5. 1/2 teaspoon salt
  6. 1/4 teaspoon freshly ground pepper
  7. Grated Parmesan cheese
Instructions
  1. Adjust oven rack to lowest position, place large rimmed baking sheet on rack, and heat oven to 500 degrees.
  2. Cut the broccoli into segments. You want them to be on the large side, about the length of the palm of your hand. Also, cut them so that there is a flat side on most pieces–just slice right through that broccoli crown (instead of separating off individual florets). You want flat sides for the caramelization to happen.
  3. Add broccoli to a large bowl. Stir minced garlic into the olive oil and drizzle it over the broccoli. Sprinkle with sugar, salt and pepper and mix together until coated on all sides.
  4. Working quickly, remove baking sheet from oven. Carefully transfer broccoli to baking sheet and spread into even layer, placing flat sides down. Return baking sheet to oven and roast until broccoli is well browned and tender, 9 to 11 minutes. Transfer to serving dish and serve immediately with lemon wedges and Parmesan cheese..
